Mini Apple Pies

had leftover pie crust in the fridge and Nick wanted something sweet. I offered to make mini-apple pies in my small ramekins. It turned out delicious! I just put a quarter of the pie crust in each ramekin….didn’t worry about making it look nice. Mixed the chopped apples with some vanilla yogurt, sugar and flour and then filled the cups. Baked for 20 minutes, then added the topping – brown sugar, butter, oatmeal and a little flour. Bake for another 20 minutes. Soooo good. If only we had ice cream….
