Easter, Lopahara Style

Hope you had a nice Easter!  I know we did.

Easter is a funny one for me.  It was a long time before I realized so many places closed down for Easter (when I was younger, we always went to church or were out with family).  But we managed to find the 3 places still open on this holiday!

Then we took our usual Sunday stroll to Starbucks.  Since it was Easter, we decided to have some “brunch.” And by brunch, I mean breakfast sandwiches.

Brunch was followed by Captain America.  Nick’s not a huge marvel fan, but he humors me (and usually ends up liking them).  I try and remind him that it could be a whole lot worse, that I could be dragging him to rom-coms or things like that.

After a lunch of popcorn, we hit up TJs – also open on Easter – to get some groceries.  I know you’re so glad that little tid bit made it into the blog.

This was followed by an exciting game of “troubleshoot the treadmill.”  Nick’s treadmill broke a few weeks ago, and he’s been having a rough go at it.  I told him to get a new one, but he insisted on trying to fix it (he bought it for $120 a little over 2 years ago).  We *think* we narrowed it down to the circuit board so he ordered a new one for…..wait for it……$160.  If it works, I will likely take credit.  If it doesn’t work, I’ll be encouraging him to buy a new one.

And we wrapped up the day with a delicious dinner that included:

Sriracha Cauliflower
Stuffed Portobellos
Kale Salad
Brats

And for dessert, we had peanut butter and chocolate dipped strawberries.  I was skeptical, but they were tasty!

The trick?  Put a thin layer of PB on the strawberry before you dip.  Yum!
