White Chocolate Chip, Macadamia Nut, Dried Cranberry Cookies

How did this all start?

So Nick suggested some white chocolate chip with macadamia nut cookies.  I decided to add in the cranberries for a little color and flavor.

After looking through a few recipes I settled on one from mywoodenspoon.  Here’s how I adapted it.

2 sticks of sweet cream butter (it’s salted and I bought it on accident, but it worked for me)
1 c packed brown sugar
1 c granulated sugar
1 Tbs vanilla
3 eggs
4 c flour
2 tsp baking soda
1 tsp salt
4.5oz salted and roasted macadamia nuts (this is the size of a typical can)
1.5 c white chocolate chips (I used 1 bag of ghirardelli chips)
1 c dried cranberries

  1. Preheat oven to 350.
  2. In a large mixer (I used my kitchenaid) beat the butter until creamy.
  3. Add the brown sugar and continue mixing until combined.
  4. Add the granulated sugar and beat until fluffy.
  5. Add the eggs 1 at a time, beating in between.
  6. Add vanilla, mix, and scrape the sides.
  7. Mix the flour, baking soda, and salt in a separate bowl.
  8. Add the flour mix about 2 cups at a time, beating slowly.
  9. Chop the macadamia nuts and cranberries.
  10. Add the chips, nuts, and berries.
  11. Mix until combined.
  12. Spoon out dough onto parchment lined baking sheet (not the end of the world if you don’t have parchment).
  13. I baked mine 11.5 minutes – until just golden.  Let them cool slightly and transfer to a cooling rack.

Enjoy!  These were really good…I think we each ate 5 on the first day 🙂
