Kale Salad

Have you jumped on the kale bandwagon?

We’ve been on it for awhile – BEFORE TJs was selling bags of pre-cut and washed kale.

We made a tasty kale salad the other night for dinner and I thought I’d share.

Ingredients

2 cloves of garlic
2-3 Tbs olive oil
1/2 bag of TJs pre-cut kale
1 nectarine, diced
1/2 avocado, diced
1 tomato
Crumbled Feta (I used the non fat stuff from TJs)

Combine the minced garlic and olive oil in a pan on medium.  Add the kale and mix until wilted.  Remove from heat and set aside to cool.

Prep the nectarine, avocado, and tomato.  Combine with kale and add feta.

Dressing:  you can use lemon juice for a little punch.  I used some grape fruit balsamic I picked up last week in Murphys.  This is a very hearty salad and can easily be eaten a day later.  The kale is so robust, it stands up well in the fridge overnight.  I don’t even think you need dressing as the garlic and olive oil are dressing enough.  Enjoy!
