What to serve for the 4th of July!

We’re back in Seattle for the 4th (not there yet, but we’ll be headed that way on Wednesday night).  Not sure what I’ll be making to add to the festive spread, but here are a few suggestions for anyone looking for something patriotic!

Red, White, and Blue Jell-O is always a crowd pleaser!  My grandma is the MASTER of, and so is my mom.  I have yet to make it, but I sure love eating it!

Layered Finger Jell-O from G’ma

1 box (3 oz ea) Orange, Lime, Lemon & Raspberry Jell-o (layered in this order) (this is how grandma makes it, use Blue Raspberry and Strawberry for the patriotic version)
6 envelopes Knox gelatin
14 oz can Condensed Milk (Eagle or any other brand)
9×13 pan, lightly sprayed with Pam or Canola oil (chill in frig)

Prep the white layer:
a) 2 env Knox + 1c boiling water
b) Condensed milk + 1c boiling water
Combine a) and b) in 4c meas cup. Set aside to cool. Keep warm in bowl of water if necessary.

Each jell-o layer (in 2c meas):
1 box jell-o + 1 envelope of Knox + 1 c boiling water
Pour into pan and let set in frig 10-20 minutes.
Prepare 2nd color as soon as previous jell-o layer is poured.
Pour 1c white layer over each jell-o layer. Let set 10-20 min.

Gently touch each layer before pouring next color. Should NOT be completely
SET. Continue, ending with RED jell-o layer.

The timeline provided by my mom:
Layer #1 (Red) takes about 15 min. to set
Add the white and wait 14-15 min.
Add the next color (blue) and wait 13-15
Add the white and wait 15-17 min.
Add the next color (red) and wait 12-14 min.
Add the white and wait 13-18
Add the last color (blue) and chill.

One trick.  Pick a corner of the pan.  This will be your “ugly” corner.  Each layer should be poured in the same corner as close to the same spot as possible.  Pour slowly, it won’t set that fast.  If you do it right, you’ll have one ugly piece but the rest will look delicious!

Another trick, put it on the bottom of your fridge.  My middle shelf sank a little and caused the layers to be uneven.

One more trick.  Don’t remove the pan from the fridge, just slide it out and pour in your next layer.

dude, lana had her first taste of jello this morning, and i was totally thinking about how my mom would make patriotic layered jello for the 4th!

In Hawaii, all the Japanese ladies make that layered jello, you’d fit right in. 😛
